I figured it out early this morning. Quite easy really.
Once you get serial console access and log into the box (with root / phatbox ) you can run a script on the box called dmssign. The box wont fully boot and mount the /dos partition if the script wasnt run on the drive.
I have an 80 gig drive out of a laptop I have running in my keg right now. WOOT! :o
